It makes perfect sense that we’ve had rain all spring and summer so far, and now that I’m in a cast, it’s 80 degrees and sunny outside. Of course. I did get to enjoy it for a bit today! I read for 2 hours in the sun in the backyard and it was by FAR the highlight of my week : )
After I came inside and made this fiesta blackbean salad!
Very simple. A can of black beans, 1/2 an orange bell pepper diced, 1/4 tomato diced, and a handful of snappeas chopped up.
I put that ontop of a bed of lettuce and covered it in grated 50% reduced fat cheddar, salt, pepper, and a drizzle of EVOO & RWV. So good!
I swear there’s bean salad under all that cheese!
