I love taking leftovers and remaking them into something even better. We had some salmon in the fridge from two nights ago that really needed to be eaten today. So I thought..salmon salad!

I took about 6 oz of broiled salmon and mixed it with:
-1/4 c. 2% fage
-tsp EVOO
-tsp Mayo
-Juice of about one lemon
-One stalk celery, chopped
-salt & pepper
I used about half of that mixture on two pieces of Health Nut bread, with spinach & bean sprouts. Delish!
I also had some fruit salad made up of a peach, some honey dew, & two small figs on the side:

so juicy!
